There is a book from the government printing office that called nutrient content of foods. You can look up any food and find the calories and nutrients.Ingredients are listed also.

If your just trying to count calories, there's a rough outline that alot of athlete's like myself use:
1g of Carbs = 4 calories
1g of Protein = 4 Calories
1g of fat = 9 calories
